Shrimp Gumbo

Ingredients:

2 pounds medium shrimp - peeled and deveined

salt and pepper to taste

cayenne pepper to taste

1/2 cup olive oil

2 pounds chopped okra

1 can  tomato sauce

1 can stewed tomatoes

1 cup chopped onion

4 cloves garlic, minced

1/2 cup chopped celery

1/2 cup chopped green bell pepper

 

Directions:

Heat olive oil and saute the shrimp, adding the flour, until the shrimp is pink.  Remove

the shrimp.  The add the garlic, celery, onion and pepper to the oil and sauté until

translucent.  Then add the tomato paste, and stewed tomatoes, okra, and season to

taste.   Let this simmer for an hour or until the okra becomes gooey and the

vegetables are cooked.  Add back the shrimp for five minutes, and serve over rice.
