Grilled Fish Burritos

Ingredients:

 

6 fish fillets, hammour, tilapia, grouper.  Any white fish.

4 tbsp olive oil

12 Tortillas, flour, or wheat.  Large burrito size

1 onion, sliced

2 peppers, sliced.  Green, red or both

2 cups White Rice, prepared as per package

8 oz Black Beans, canned, warmed

Salsa pre packaged

Guacamole, per instructions below

Cumin, Salt and Pepper

 

Directions: 

 

In a heavy skillet, heat half the olive oil, and sauté peppers and onions, sprinkle with cumin, salt and pepper.  When soft, remove from pan and discard excess oil.  Add remaining olive oil, and sauté at medium heat the fish fillets, sprinkling with cumin, and salt and pepper to taste.  Heat tortillas for 1 minute in the microwave, and wrap in a towel.  Let everyone prepare their own burritos…putting a bit of each ingredient in the middle of the tortilla, and folding in the edges, then rolling it up.  

 

For homemade Guacamole, use ripe, soft avocados, peeled and pitted, then mashed.  Add one part chopped tomatoes and onions to 3 parts avocados.  Add Salt, pepper and hot sauce to taste.
