Shrimp Stir Fry

Stir fry is a quick and healthy meal.  Try lots of combinations, peppers, mushrooms, bean sprouts,  onions, cabbage, bok choy, corn, brocolli, any veggie works.  So mix it up, and have a quick and easy meal.  Just keep the soy sauce and ginger handy, as it gives the overall Asian flavor to all your veggies.

Ingredients:
  • 1 kilo  Medium Shrimp, peeled and cleaned
  • 1/2 cup sesame oil
  • 1 medium white onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup chopped mushrooms, shitake, portobello or button
  • 1 green pepper, thinly sliced
  • 1/2 cup bean sprouts
  • 1/2 cup thinly sliced red cabbage
  • 3 Tbsp  fresh ginger, minced
  • 1 cup soy sauce
 
Directions:
Heat 1/2 the oil in wok, add shrimp and fry until they turn red, but not fully cooked. Remove.  Then dry and return wok to heat, adding the remaining oil. Fry the onion and garlic first, for 2 minutes, then add the pepper and cabbage, and ginger.  stir fry for 5 minutes, until translucent, then add the mushrooms and beansprouts.  Stir fry 2 minutes, then add the soy sauce..  Add back the shrimp and fry another few minutes, until all the vegetables are fully cooked and the shrimp is warm.   Serve immediatly over rice.
