Crispy Roasted Duck

Ingredients:
  • 1 tsp salt
  • 2 tsp paprika
  • 1 tsp black pepper
  • 1/2 cup  butter, melted
  • 1 5 lb.2.25 kg  Whole Duck, thawed (found in Lulu or Carrefour, frozen section)
 
Directions:
  • Preheat oven to 375 degrees F (190 C) 
  • Pour boiling water over duck, this helps melt the fat, to make it crispy, then dry the duck and rub seasoning into the skin.  Place in roasting pan and roast 1 hour.
  •  Spoon 1/4 cup melted butter over bird and continue cooking 45 minutes more, then spoon remaining butter over duck and cook 15 more minutes
  • Serve with brown wild rice and roasted carrots.
